Charles Joly's Biarritz cocktail – a martini with a twist

Thanks to James Bond, we all know you can have your martini shaken or stirred, but what about with a spritz? World Class Bartender of the Year Charles Joly created this twist on the classic cocktail for an event at Aqua Nueva. Sadly the drink is no longer available, but here's the recipe so you can enjoy it at home. 

 

Ingredients

Chamomile liqueur

If you cannot source a chamomile liqueur: 500ml aromatic pisco, warm (do not boil) and infuse with 10g whole chamomile bud for 30 minutes. Strain chamomile, press, filter and top back up to 500ml. Add 25% sugar until dissolved, 5 dashes orange bitters and a few drops of orange flower water.

  • 50ml CÎROC vodka
  • 20ml Cocchi Americano
  • 10ml Amontillado sherry
  • 15ml chamomile liqueur

Method

Combine all ingredients. Stir in a mixing glass with ice. Strain into chilled coupe. Mist with chamomile tincture and orange oil. Place twist decoratively.

To create the chamomile mist, make a chamomile infusion per the liqueur, but do not add any sugar. Place into a decorative, vintage style perfume atomizer.
