Black Roe's tuna and yellowtail poké recipe

Ever made sushi at home and it's all fallen apart? That's the best way we can described Hawaiian dish poké: it's got all the components, but they're arranged prettily in a bowl rather than rolled up in a tube. Which means, you'll be pleased to hear, that you can make this delicious meal in minutes

Ingredients

  • 700g cooked rice (see below)
  • 350g tuna (1cm slices)
  • 350g yellow tail (2cm dice)
  • 5g sea salt
  • 120g spring onions, chopped
  • 10g fresh coriander, chopped
  • 20g sesame seeds, toasted
  • 150g black tobiko

For the sauce

  • 215ml dark soy sauce (Kikkoman preferably)
  • 20ml sriracha chilli sauce
  • 7ml toasted sesame oil
  • 75ml light fish stock

For the cooked rice

  • 650g sushi rice, cooked
  • 40ml rice wine vinegar
  • 25g sugar
  • 5g salt

Method

  1. To make the sauce, mix together all the ingredients with a whisk.
  2. Gently warm together the vinegar, sugar and salt to dissolve, and add to the cooked rice.
  3. Mix the salmon and tuna in separate bowls with half the sauce and salt and marinate for 10 minutes.
  4. Add the spring onion and coriander to the salmon and stir.
  5. Arrange the rice on the serving bowl and top with the two fish mixes. Garnish with the sesame seeds and black tobiko.
