If you like fried chicken – and we're sure you do – you'll know that all that spicy, crispy deliciousness needs a light, refreshing drink to accompany it. And that's where Soul Shakers come in. The expert mixologists are manning the bar at new Spitalfields opening Absurd Bird, and they've shared their recipe for Hillbilly Iced tea, which features their very own spirit: Absurd's Moonshine. It's a Scottish grain spirit with wild Mexican agave, French grapes, and American rye, making it a spirit that suits just about any cocktail – and you can pick it up at the restaurant for £20. 

Ingredients

  • 50ml Moonshine
  • 200ml Lipton peach iced tea
  • 10ml simple syrup
  • 15ml fresh lemon juice

To garnish

  • Orange slice
  • Lemon wedge
  • Mint sprig

Method

Mix all the ingredients in a glass over ice, garnish, and serve.
