For a drink that's inspired by the leading principle of William of Ockham (Occam's Razor – we won't get into the details, let's just say philosophy is a bit beyond our remit), this is one hell of a modern-tasting serve. This cocktail has a smoked hint of pineapple and sage sugar syrup which work together to produce a savoury and sweet combination.

- 50ml Abuelo rum
- 20ml lime juice
- 20ml sage-infused sugar syrup
- Fresh smoked-pineapple
- 1 leaf of fresh sage
- Ground black peppercorn
Muddle the smoked pineapple and leaf of fresh sage before building the rest of the ingredients and shaking. Serve in a martini glass.
