The G&T is enjoying a contemporary renaissance, with new twists popping up everywhere you look. We love this one from dim sum king Ping Pong, which adds punch in the form of rosemary, lemon sorbet and orange blossom honey. Check the recipe below.


  • 40ml Gin Mare
  • 1 drop of orange blossom honey
  • 5g rosemary stalk
  • 200ml tonic water
  • 70g lemon sorbet


Build over ice and garnish with the rosemary. Serve the sorbet on the side.
