For Bert's cocktail, Jon Lister, European ambassador for Diplomático, wanted to instil Japanese flavours into a stirred, straight-up and refined serve. It uses Tamagawa sake alongside Nikka whisky and Cocchi vermouth to enhance the rich flavour profile of Diplomático's show-stopping aged rum Reserva Exclusiva. Present it in a coupette if you haven't got a clay sake mug to hand, alongside a sliced plum, burnt with a blowtorch, to add a touch of the forgery to the cocktail.

Ingredients

  • 45ml Diplomático Reserva Exclusiva
  • 15ml Cocchi di Torino
  • 15ml Tamagawa Heirloom Yamahai Genshu Red Label
  • 5ml Nikka Pure Malt Black
  • 2 dashes of peach bitters

Method

Stir with ice in a mixing glass, then pour neat into a chilled coupe-style glass. Garnish with a burnt sliced plum.
