Jenny's cocktail is named after her business – apt considering it uses not one but two of her products in it: her Banana Ketchup and Chipotle Ketchup. These add a sweet and savoury tang to the drink. It's built around Diplomático's Mantuano rum, served long with crushed ice, with the addition of lime juice and honey to add complexity and balance.
- 50ml Diplomatico Mantuano
- Juice of ¼ lime
- 20ml honey syrup (2:1 ratio of honey to water)
- 2 heaped bar spoons Rubies in the Rubble Banana Ketchup
- ½ bar spoon Rubies in the Rubble Chipotle Ketchup
Muddle the lime in the base of the tin, add the rest of the ingredients, fill the tin two-thirds full with crushed ice and stir contents to mix. Fill with more crushed ice and then garnish with a lime husk and pomegranate seeds.
